CORN CASSEROLE
1 box Jiffy Cornmeal Muffin Mix
2 cans cream style corn
4 eggs
3/4 cup oil
2 tsp garlic salt
1 1/2 cups grated cheese
1 small jar chopped pimentoes (optional)
Mix all ingredients together and top with cheese. Bake at 350 for 45 minutes.
SWEET VIDALIA SPREAD
1 cup sugar
2 cups water
1/4 cup vinegar
1/2 tsp celery seeds
2 medium Vidalia onions, finely chopped
3 tbsp mayonnaise
In a saucepan, bring, sugar, water, vinegar and celery seeds to a boil. Add chopped onions, cover and remove from heat. Keep covered for 15-20 minutes. Drain and mix with mayonaise. Serve with assorted crackers. Makes appx 2 cups.
TOMATO-CHEDDAR SPREAD
1 (10 oz) can Ro-Tel original tomatoes and green chilies.
1 cup mayonnaise
2 (8 oz.) blocks sharp cheddar cheese (not pre-shredded)
1 (4 oz) jar chopped pimentoes
Stir together tomatoes, mayonnaise, cheese and pimentoes. Serve with crackers. Makes 2 1/2 cups
BEAN SALAD
1 can whole kernel corn
1 can tiny English peas
1 can cut green beans
1 can small lima beans
1 can black beans
1 can sliced carrots
1 medium jar chopped pimentoes
1 cup onion, sliced
1 cup bell pepper, chopped
1 cup celery, chopped
Drain corn, carrots, peas and beans. Mix all vegetables together.
DRESSING:
1 cup vinegar.
1 cup sugar
3/4 cup oil
1 tsp salt
1 tsp pepper
2 Tbsp water
Mix and heat all ingredients to boiling. Cool and pour over vegetables. Mix well and refrigerate overnite.
Blue Cheese Dressing
Mix the following ingredients together
4 oz. blue cheese
1 1/2 cup mayo
1/4 cup milk
½ teaspoon garlic
1/3 cup parmesan cheese
Beer Bread
Ingredients
3 cups self-rising flour
3 tbsp. sugar
12 oz. beer at room temperature
Directions
Preheat oven to 375
Oil loaf pan or spray with pam
Mix above ingredients
Sprinkle flour on counter and knead dough
Put dough in loaf pan and bake for 50-55 mins
Ingredients
8 – 10 large oranges (the more oranges, the more Ambrosia)
1 cup coconut
1 cup chopped pecans
1 jar chopped drained red cherries
Directions
Peel and cut up oranges. Be sure to squeeze orange center oranges are cut up. Add coconut, chopped pecans, and chopped, drained cherries. Refrigerate and serve with cake or alone
Christmas Fruit Cookies
Ingredients
1 cup light brown sugar
3 cups butter
3 cups flour
½ cup milk
1 tsp. cinnamon
1 tsp. soda
(Any kind of candied fruit can be used)
1 lb. candied cherries
1 lb. chopped dates
½ lb. candied pineapple
7 cups pecans
1 box light raisins
Dash salt
Directions
Grease cookie sheet. Preheat oven to 300
Cream butter and sugar. Add eggs. Alternate flour milk
Add fruit in any order. You may have to mix with hands after all the fruit is added.
Drop cookies onto greased cookie sheet with teaspoon. Bake at 300 for 20 to 30 minutes. If you cook cookies a bit longer they will be crispier. MAKES 12 DOZEN
Date Loaf
Ingredients
1 box pound cake mix
1 cup chopped and drained red cherries
1 cup chopped pecans
1 cup coconut
1 cup chopped dates
Directions
Preheat oven to 350
Make pound cake according to box instructions.
Mix in chopped, drained cherries. Mix well
Mix in chopped pecans. Mix well
Mix in coconut. Mix well
Mix in chopped dates. Mix well
Line loaf pan with aluminum foil. Leave enough foil on each end to cover cake when baked. Press foil well into pan being sure to fit into corners. Spray and flour foil in loaf pan. Tap pan over trash can to get off excess flour.
Pour batter into loaf pan. Pan should not be overfilled or it will cook over.
Garnish top of cake with whole pecans and half cherries pieces
Put cake into middle of oven for 1 to ½ hours. Cake is done when cake tester comes out clean in the middle.
Refrigerate cake. It cuts better cold. It may be frozen for an extended time.
